Made this tonight out of a whim. It is after a style of how I like to make my hamburgers, but this time I used chicken and avocados. It's an open faced sandwich and here's what I did to create it:
Half of a whole wheat slide of bread; toasted (and half the carbs ^_^). FF mayonnaise. Chicken cooked with garlic, thyme, basil, sea salt, and cayenne pepper (all to taste). 3 slices of avocado, 2-3 slices of tomato (2 according to this picture), and half a slice of cheddar cheese. On the side some cucumbers and salmon dill cream cheese. It was a very delicious meal which I topped off with orange jello and strawberries.

Work Is Trying To Kill Me
The only real highlight of the week is the fact that work makes being diabetic difficult. But I've been strong! Tuesday was my works staff meeting and they were serving dinner. Dinner was rolls, pasta salad, chips, artichoke dip, some amazing Costco cookies, and a roasted chicken. I chose not to partake since Steven and I were doing TACOS once I got home, but boy were the smells so tempting and delicious. Speaking of smells, yesterday I took a bite of a chocolate chunk cookie, but before taking the bite, I gave it a good whiff. I guess I was super excited :)
Good news, my blood sugar has been more reasonable. 3 days in a row it was under 120! Woot! It's up today, but I think I wasn't being as careful yesterday (maybe I shouldn't have taken a bite of the oh so yummy cookie....). Also been unreasonable tired lately, not sure why but the thought is the cold may still be lingering in me and my body is wanting rest to heal up or I just need to go to bed at 9 and get up as though I'm going to work even on the weekends :/
Here's the garden. The Romaine is about ready to harvest and the strawberries are forming! Did you know Strawberries are low sugar and carbs? At least that's what I saw online when looking up nutrition facts on fruit :)

Tacos With A Lettuce Shell!
This was a satisfying meal especially when I just got home from a meeting in which there was 95% carb loaded food for an employee's dinner. It was torture looking at the Costco rolls and chocolate chunk cookies, as well as a pasta salad and whole grain chips. I could have had the roasted chicken, but I already had dinner plans with Steven. We were gonna have tacos!
I figured since he had a whole head of Romaine in the fridge waiting to be made into a salad that we could use some of the leaves as the tortilla shells. Oh man! It was a brilliant idea and this will probably be a very common meal in our home now!

Starving, Starving, Satisfied
It has been quite the week. Work went well, but the new eating habits I've been making have been entertaining. As soon as the doc said there was potential I was diabetic, I began to eliminate sugar and most carbs. On Monday I went to my doctor for him to look at the blood work and tell me what to do. So I'm on MetFormin and I get to check my blood sugar once a day. And that has me kinda worried because when I started testing my blood sugar it had been a week on the new diet and in the morning after 8 hours of sleep before eating, yet I was still high. Not above 200, but the lowest has been today at 136. Steven thinks it could quite possibly be my body is just slowly adjusting to the life style change and here in another week I'll be looking even more normal.
Steven turns out to have quite normal blood sugar for the morning. He tested with me Saturday just to see what his glucose was was fasting. 80. Kinda jealous of him right now.
Oh and as the title hints, I finally am not starving any more! I was on the verge of crying when for a whole week I kept having a low grade hunger when I was eating 5-6 meals a day. Finally it has ended! For the past 3 days I've actually been seeing the time fly by and not really caring to eat a snack. I also hope to hop on a scale here soon because I want to see if I've lost any weight. Last time I checked it was 195. Here's hoping for 10 pounds down (yeah right, but one can wish).
Other than those things going on, Steven and I kinda are sick. I was out of it yesterday feeling really tired and had a headache going on and today Steven is feeling achy and has a good headache. So we are taking it easy.

R.I.P Thor
This week began really swell. I still have my new schedule and I am feeling it is safe to assume this will be a permanent position for me which has me super thrilled! Steven, if I'm correct, has finished his last week of OT. It will be nice being able to use the car again, yet the extra income will be missed.
As I said the first part of the week was great. The weather's been real nice too! However I had some blood work done on me the week before in which a lot of everything was elevated (if not too dang high!) and so they had me take another blood test to see what my blood sugar has been over the past 90 days. Dunno how they can do that, but they did and Friday was a double wammy of bad news.
Friday, after having a great day at work, I get off and read from my mom her text saying Thor had to be put down. The poor guy had Bone Cancer and was suffering. It was sad to hear but thankfully I saw him recently and knew this was bound to happen. I will miss my lovable friend when I go see my parents now, but I know he's happier where he is now.
Then immediately after reading that I listen to a voice mail saying I am diabetic. Of course I wanted to be in disbelief. I was told there was a good chance I was prediabetic, but no. Apparently my blood sugar has been elevated and I was diabetic. I still have yet to see my physician and have them look at the paper work and tell me specifically what I'm dealing with, but I am taking no risks now. I have changed the diet! Sugar free is a must now. Let alone also going for low fat (if not fat free) and mostly gluten free (limiting it to once a week that I can enjoy breads and pasta's in my diet). And it is time for me to crack down on my exercising. I have been doig so so. Like every other week for a week consistent exercise. Now I need to do at least 30 minutes of activity 6 days a week (since Sunday is a day of rest.... although it is nice to take a stroll around the neighborhood when it's sunny).
I was pretty depressed about it, but now I'm happy because I want to live and to do that I must eat as healthy as possibly. Chances are as I continue to eat healthy and exercise, I just might be able to beat the diabetes. I shall find out I'm sure, but until then, and forever more, I must be careful.
On a happier note I got to watch a movie with Jessica and Adam. They brought the Devil Wears Parada and we grilled up some chicken and burger. So yummy!
Saturday I went to an Art Walk in which I was there to draw pictures to generate donations for the Auburn Valley Humane Society. I only did 2 picture which I felt turned out pretty well. I will probably be doing more pictures next week for Pet-Palooza. I will also try to make sure I take a photo or two of my creations for you all to see :)
Then that night Steven and I took my Mum and Dad out dancing for Mother's Day. We went to the Century Ballroom off of Broadway and Pine in Seattle. We salsa danced for many hours and had a lot of fun! My feet were very tired by the end. Steven was having lots of fun spinning me around. He continues to get better though we lack consistency in dancing. No where near professional, but he's 100% fun to dance with :)
Anywho, the weather is really hot today and will be for another few days. Here's hoping Steven and I don't melt away!

Have I Mentioned That I Love My Job?
Hello everyone and sorry this is getting out late. Gonna try and pretend this is Sunday and save today and Monday to go with the next post :)
So last week Monday and Tuesday I got to work with 4 INFANTS!!! All by myself!! Full shifts too! It was awesome! I definitely am grateful that is not my 24/7 job, but the fact I was able to do it and enjoy it feels like an accomplishment.
Then I got to enjoy my new schedule with the Pre-K's! I love not having to have a 4 hour break in the middle of my work day (mostly because Steven's been doing OT and I don't have the car). Plus I'm working with my favorite teacher, Tamica.
Friday, Steven and I got to see the Avengers with Jessica and Adam. That was a really good movie. An action comedy that has me loving it more than X-Men. Jessica also brought along some smore cupcakes that were super yummy ^_^
Saturday Steven and I celebrated Cinco de Mayo by rollerskating with Jackie, getting some Menchi's Frozen Yogurt, and going to a birthday party. At the birthday party one of the people there who we met a year ago commented on how Steven and I were a very cute couple. It made my night.
Then Sunday was Stake Conference, in which we got a new presidency, and laundry day at my folks place. It was good seeing my parents and being able spend some time with them. Even got some good old tapioca pudding!
That was the week. Really quick and super good! Hope yours was a good one too! And here's the recent pictures of the plants!

Sorry everyone. I was visiting family yesterday, worked today plus shopped and cooked dinner and here it is 9pm and I have to finish a project for work and get to bed asap. So I'll recap on the week tomorrow :)
